Ingredients

  • 2 cups cooked quinoa (see quinoa recipe)
  • 1 diced cucumber
  • 2 roma tomatoes, diced
  • 4-6oz feta cheese, crumbled
  • olive oil
  • vinegar or lemon juice
  • basil
  • mint
  • salt and pepper to taste

 

Directions:

Mix quinoa, cucumber, tomatoes, and feta in bowl.

Drizzle with a little vinegar or lemon juice and olive oil.  Add basil, mint and salt and pepper to taste.
