• 1 TBSP  Oil
  • ½ Onion- chopped
  • 2-3 Carrots- diced
  • 2-3 Celery Ribs- diced
  • ½-1 pound Ham (or salt pork)
  • 3 cups Lentils
  • 8 cups Water
  • Salt & Pepper to taste
  • Optional: Curry powder, cumin, or cayenne



  1. Spread out dry lentils and remove any foreign particles.
  2. Wash lentils in cold water. It is not necessary to soak lentils.
  3. Sauté onions in oil until soften. Add carrots and celery, sauté for 2 minutes. Add ham, sauté for 1 minute. Add lentils and water.
  4. Cook covered until tender, about 1 hour. (Longer for lower temp. crock pots)

Note: Boil lentils gently and stir very little; fast boiling and lots of stirring cause bean skins to break
