Ingredients
- 1 TBSP Oil
- ½ Onion- chopped
- 2-3 Carrots- diced
- 2-3 Celery Ribs- diced
- ½-1 pound Ham (or salt pork)
- 3 cups Lentils
- 8 cups Water
- Salt & Pepper to taste
- Optional: Curry powder, cumin, or cayenne
Directions
- Spread out dry lentils and remove any foreign particles.
- Wash lentils in cold water. It is not necessary to soak lentils.
- Sauté onions in oil until soften. Add carrots and celery, sauté for 2 minutes. Add ham, sauté for 1 minute. Add lentils and water.
- Cook covered until tender, about 1 hour. (Longer for lower temp. crock pots)
Note: Boil lentils gently and stir very little; fast boiling and lots of stirring cause bean skins to break
