Ground Beef Chilaquiles recipe main photo

Ingredients

  • 2 cups oil for frying

  • 30 (6 inch) corn tortillas, torn into strips

  • 1 pound ground  beef
  • 1 medium onion, chopped
  • 1 can (4 ounces) chopped green chilies (optional)
  • 1 jar (28 ounces) salsa or tomato sauce or red enchilada sauce
  • 4 cups (16 ounces) shredded Monterey Jack cheese or cheddar cheese


Directions

  1. In a large, heavy skillet, heat the oil to 350 degrees F. Carefully stir tortilla strips. Fry until tortilla strips are crisp and golden brown. Remove from heat, and drain on paper towels. Drain the skillet, leaving only a thin residue of oil.
  2. Add ground beef and onion to the hot skillet and cook until meat is browned and onion is tender; drain. Stir in salsa (or sauce of choice), chilies (if using) and crispy tortilla strips. Simmer, uncovered, until desired consistency (approximately 5-15 minutes) Remove from heat and add cheese and stir.
