• 2 tablespoons oil
  • 2 tablespoons chopped onion

  • 2-3 slices jalapeno

  • 1/2 tsp. garlic powder
  • 1 1/2 cups uncooked white rice

  • 2 cups water or chicken broth

  • 1 cup tomato sauce or chunky salsa


  1. Heat oil in a large, heavy skillet over medium heat. Stir in onion and jalapeno and cook until tender, about 5 minutes.
  2. Mix garlic powder and  rice into skillet, stirring often. When rice begins to brown, stir in water or chicken broth and tomato sauce or salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
