Ingredients

  • 2 cups jasmine rice
  • 1 1/2 cups water
  • 1 can coconut milk
  • 1-2 tablespoons chicken paste
  • 2 tablespoons sugar (optional)
  • 1/4 cup coconut (optional)
 Stove top directions:

Rinse and drain rice in cold water. Place in a saucepan with water, coconut milk, and chicken paste (and sugar if using). Place the pot over high heat and, bring the liquid to a boil. Stir and reduce the heat to the lowest possible setting and cover the pot tightly with the lid. Continue cooking for 15 minutes.

Remove the pot from the heat, stir in coconut and let stand 10 minutes, covered. Fluff with fork and serve.

 

Microwave Directions:

Rinse and drain rice in cold water. Place in a microwave safe bowl with water, coconut milk, and chicken paste(and sugar if using).  Place the bowl in microwave. Cook on high for 5 minutes.  Then cook it for an additional 15 minutes on 50% power. Stir in coconut and let stand 10 minutes, covered. Fluff with fork and serve.

You can top this with chopped peanuts and cilantro to make it extra tasty
