This is a great weeknight meal.


  • 8-16  slices bacon, cooked- depends on how thick your bacon is
  • 8 slices sandwich bread
  • 2 tomatoes, sliced
  • 1 avocado, sliced thin
  • lettuce or mixed baby greens
  • mayonnaise, optional


  1. Lightly toast sandwich bread and spread with mayo. Stack avocado and tomato slices on half of each sandwich.
  2. Pile up the bacon and stack on top of tomato layer. Pile lettuce on top of bacon, and top with other slice of bread. Cut sandwich in half, and enjoy!
