This is a great way to use up leftovers and make  a quick meal.  Add 6 eggs and scramble though it right before adding the cheese and you will have a great breakfast burrito.

Ingredients

  • 4 cooked or raw potatoes, diced
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 red or green bell pepper, diced
  • 1 tablespoon minced garlic
  • 1/2 teaspoon cayenne or red chili flakes
  • 1 tablespoon salt
  • 1 tablespoon coarsely ground black pepper
  • 1 (3-pound) store-bought rotisserie chicken, meat removed and diced
  • 1/4 cup chicken stock (optional)
  • 2 tablespoons chopped fresh parsley leaves (optional)
  • 1 cup shredded cheese

Directions

In a large  skillet over medium-high heat, add the butter and potatoes. If using raw potatoes sauté until potatoes are halfway cooked of if using cooked potatoes go to next step. Add the onions, bell peppers, garlic and red chili flakes and saute for a few minutes. Add the salt and pepper. Stir in the chicken and cook for 4 to 5 minutes until chicken is warmed through and making sure potatoes are cooked through. Season with more salt and pepper, if needed. Stir in the chicken stock to add some moisture, along with the parsley. Allow to simmer for a few minutes. Top with cheese if desired.

This is very versatile. Use up whatever meat you have- pork, beef, chicken, kielbasa, sausage, etc

You can add green chiles, any type of cheese, extra veggies
