This recipe has a lot of versions.  Its a great recipe because you use what you have on hand.  Start with the potatoes and add anything else. You can also make these into breakfast burritos.


  • 2 pounds diced potatoes (or 1 package frozen hash browns)
  • 1 onion -diced
  • salt and pepper
  • red chili flakes
  • oil for frying
  • 4-6 eggs

Optional to add- bacon, sausage, ham,  bell pepper

Optional topping- green onions, cheese, salsa, cilantro


In skillet, add potatoes, onion, salt, pepper, red chili flakes and any meat or vegetable you would like.  Fry until meat is cooked through and potatoes are tender. Mix  eggs over potato mixture and cook until done. Top with anything desired
