This is from Grandma Mabel Stotts’s recipe collection.  I have made it many times and its yummy! I have made it so many times and still love it after all these years.



2 cups sugar or brown sugar

3 eggs, well beaten

1 cup vegetable oil

2 cups grated zucchini

3 cups flour

1 tsp vanilla

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/4 cup milk

1 cup nuts




Blend sugar, oil and eggs.  Stir in zucchini. Add the remaining ingredients, except nuts, beat. Add nuts. Grease and flour two 9x5x3 loaf pans. Bake at 325 degrees for one hour or until done.
