Ingredients
- 2 cups cooked quinoa (see quinoa recipe)
- 1 diced cucumber
- 2 roma tomatoes, diced
- 4-6oz feta cheese, crumbled
- olive oil
- vinegar or lemon juice
- basil
- mint
- salt and pepper to taste
Directions:
Mix quinoa, cucumber, tomatoes, and feta in bowl.
Drizzle with a little vinegar or lemon juice and olive oil. Add basil, mint and salt and pepper to taste.
