This is a great weeknight meal.
Ingredients:
- 8-16 slices bacon, cooked- depends on how thick your bacon is
- 8 slices sandwich bread
- 2 tomatoes, sliced
- 1 avocado, sliced thin
- lettuce or mixed baby greens
- mayonnaise, optional
Instructions:
- Lightly toast sandwich bread and spread with mayo. Stack avocado and tomato slices on half of each sandwich.
- Pile up the bacon and stack on top of tomato layer. Pile lettuce on top of bacon, and top with other slice of bread. Cut sandwich in half, and enjoy!
